People are often searching for gluten free options because a family member or friend has an allergy or sensitivity. I have found a few snack options using Chex cereal that taste so good and do not contain wheat.

Cinnamon Chex Mix

Have you ever been to Disneyland and eaten a churro? Ever been skating on the canal in Ottawa and enjoyed a bear claw? That is what this recipe reminds me of.

4 1/2 cups rice chex (1/2 of 345g box)

4 1/2 cups corn chex

1 cup brown sugar

1/2 cup butter

1/4 cup corn syrup

1/4 tsp baking soda

1/3 cup white sugar

1 tsp cinnamon

Preheat oven to 350 °

Mix chex in a large mixing bowl. Set aside.

Mix cinnamon and sugar together in small bowl. Set aside.

Heat butter, brown sugar and corn syrup in a pot. Bring to a rolling boil and let boil for 1 minute without stirring. Remove from heat and stir in baking soda.

Pour caramel mixture over cereal. Stir till coated. Spread on parchment lined baking sheet. Sprinkle with half of the cinnamon sugar mixture.

Bake 5 minutes, stir to turn over and sprinkle with remaining half of cinnamon/sugar. Bake another 3 minutes.

Cool completely and break apart into bite sized pieces. Store in an air tight container.

Caramel Chex Mix

If you have any caramels left after making my brownies I suggest you try this snack.

I did a double batch and kept one tray with no chocolate and the other I drizzled.

3 cups Corn Chex (I used the honey nut chex)

3 cups Rice Chex ( I used the chocolate chex)

25 caramels (some brands say they do contain wheat)

3 Tbsp butter

3 Tbsp milk

1/4 cup semi sweet chocolate chips

Heat oven to 300°. Line a 15 x 10 cookie sheet with parchment paper. In a large bowl mix cereals. Use a pot to heat milk, butter and caramels. Cook at a low heat and stir constantly.

Once smooth, pour over cereal stirring until coated. Spread on parchment lined pan.

Bake 20-24 min stirring after 10 min.

Let cool 15 min. Microwave chocolate chips for 30 sec, stir, microwave another 30 sec, stir. If still not smooth, microwave another 10 sec. Spoon into a small ziplock and cut corner. Drizzle over the cereal mixture and refrigerate until set. Break into bite sized pieces and keep in air tight container.

I decided to check out the Chex website to see what other snack options they have. These recipes do not appear to all be gluten free but I am sure some of them are: Chex snacks.
