I had one of those days on the weekend where you just crave homemade cookies.

I really wanted to make some oatmeal cookies.

My “go to” recipe was back at our house in Fort McMurray so I thought I would go online to search for one.

You’d think that finding a good oatmeal cookie recipe would be easy.

Recipe after recipe that I looked at had negative comments like “spread out too much”, “too crunchy” or “dough wouldn’t stick together”.

I decided to send my son Matthew a message asking him to find my recipe and take a picture of it for me.

It is from a small cookie shaped recipe book.

The same book that has my favourite soft ginger cookies.

Ingredients

3/4 cup butter or margarine (melt 40 sec in microwave)

3/4 cup white sugar

3/4 cup brown sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1/2 tsp salt

2 cups shredded coconut

1 1/2 cups oats

2 cups chocolate chips

Directions

Cream butter and sugars. Add eggs and then vanilla. Set aside.

Mix flour, baking soda and salt in separate bowl.

Stir together wet and dry ingredients until just combined.

Fold in coconut, oats and chocolate chips.

This was only a half recipe.

Since it is only my husband and I eating these, I decided to only make a half recipe.
I just divided all the ingredients by two.

I also only have one cookie sheet and a pizza pan at my apartment and half the recipe fit perfectly on those two pans.


Drop by teaspoon onto parchment lined cookie sheets.

Bake at 350° for 8-10 minutes. **as you can see in my notes in the recipe picture, I have a longer cooking time from Fort Mac.**
I suggest watching them after 8 min and take them out if they are a bit browned.

I used butter this time but usually I use margarine. It may have made them brown quicker.

I made a half recipe this time around and got 21 cookies. It only took 9 min.

A perfect cookie to satisfy any cookie craving.
