A friend had shared this recipe on facebook for Peanut Butter Popcorn Crunch. I thought it would be a good snack for us as both my husband and I like peanut butter flavoured snacks. It reminded me of my caramel corn mixture with different things mixed together and then chocolate drizzled on top.

Ingredients

8 cups popped corn

2 cups Reese’s cereal

1 cup honey

1 cup sugar

1 cup peanut butter

1 tsp vanilla

1 cup Reese’s Pieces candy

1/2 cup semi sweet choc chips (microwave 30sec + 30sec +10sec +10sec stirring in between. Spoon into small ziplock, cut corner and drizzle over)

Directions

Pop some corn with an air popper. The recipe called for 8 cups.

I popped a 1/2 cup of kernels and that was too much…maybe 1/3 would work.

I measured out the cereal and added it to the popcorn.

In a medium saucepan, melt the honey and sugar.
I started at a low heat but increased it to medium to get it to a boil; stirring the whole time.


Once it came to a boil, let it boil 1 min without stirring and then remove it from the heat. Stir in the peanut butter and vanilla. It thickened quickly so work quickly to stir the mixture and add it to the popcorn/cereal. Stir it all till it is well coated.

The recipe said to use only one baking sheet lined with parchment. By the time I spread it on the pan, it was almost like a cake. I sprinkled the Reese’s Pieces candy on it and pressed them in slightly. I then melted some choc chips and drizzled them over top.

Once it cools, break it apart or cut it and enjoy.

If you are a person likes like peanut butter and honey sandwiches then this is the snack for you.

It ends up kind of chewy like a Rice Krispie square.

Making this again, I would add the Reese’s Pieces to the popcorn and cereal while stirring in the sugar/honey/PB mixture.

By adding them on top, they didn’t really adhere to the mixture and just fell off when I broke it apart.

I would also like to try to press the mixture into a bundt pan and then slice it once cooled….like a popcorn cake.

It was a good snack to bring to our board game night at my brother-in-law’s house and I would probably make it again sometime for such an occasion.
