After Christmas everyone is trying to watch what they eat and make more healthy choices. I used to make this recipe quite often when I was trying to lose weight through weight watchers. It has a nice flavour and has healthy ingredients. I always used pollock as it was cheaper to buy and has a mild flavour. These days, you can get shrimp on sale fairly cheap so I may have to start making it with shrimp.

Ingredients

6-7 pollock fish fillets or a bag of shrimp

olive oil

1 large onion chopped

2 cups diced celery

4 garlic cloves

1 large carrot thinly sliced

1 1/2 tsp Worcestershire sauce

2 1/2 cups of broth ( I used ham broth but chicken or veg broth would work as well)

1 can 796 ml diced tomato

1 Tbsp dried basil (I just eyeballed it and sprinkled over top)

Salt and pepper to taste

1 cup of milk (I used 1%)

2 tsp corn starch

Directions

Cook fish or shrimp according to package directions.

Sauté onion, celery, garlic, carrot and Worcestershire sauce in olive oil until tender.

Break up cooked fish into small pieces and add it to veggies. Cook 3-5 min.

Transfer to Dutch oven or large pot. Add broth, tomatoes, basil and s&p.

Bring to a boil, reduce heat, cover and simmer 7 min. Add milk and continue to simmer 3 min. Dissolve corn starch in a small amount of broth then add to soup.

Continue cooking till stock thickens slightly. It won’t get really thick.

It is really easy to make and is a nice change from the usual soups we eat.
