I am all about easy meals and comfort food especially as the cooler weather sets in. Not sure where I got the idea to use crescent rolls to make a ring but I have filled them with chicken, beef and ham. Here are two versions that our family likes best. These recipes feed four adults or two adults and three kids with no leftovers.

Here is the base for each ring. On large pizza pan arrange 2 cans of crescent rolls in a circle with wide sides in. It should resemble a sun.

Taco Ring

ingredients:

1 lb lean ground beef

1 pkg taco seasoning

1/2 cup water

1 can corn

1 cup shredded cheese

1 cup salsa

Sour cream or plain yogurt (optional)

2 cans Pillsbury Crescent Rolls

Preheat oven to 350. Brown ground beef. Drain grease. Add taco seasoning and water. Once thickened, add corn.

Remove from heat and stir in cheese.
Spoon meat mixture onto wide part of crescent rolls, all the way around. Spoon a small amount of salsa on top of the meat.

I found that the mixture was a bit too much for the ring so I put some in a container in the fridge. It made a perfect taco burrito wrap for the next day.

Take the pointed end of each crescent roll up and over the ring and press it into the dough.

If you are using a pan with holes like mine above, make sure to put another pan below it in the oven to catch any drips.

Bake for 20-25 minutes. Wait five minutes before slicing. Serve with a generous dollop of sour cream or plain yogurt (I used vanilla yogurt and it was delicious).

Chicken Brunch Ring

2 large cooked chicken breasts diced

1/3 cup mayo

2 Tbsp honey or dijon mustard

1 Tbsp green onion

4 slices of cooked bacon broken up (see NOTE below)

3/4 cups shredded cheese.

Using the same method as the taco ring, create a sun with the crescent rolls. Mix all the ingredients together and put around the ring. If you don’t want to overload it and you have some of the mixture left over, it makes a great chicken sandwich the next day.

Bake at 350 for 20-25 minutes.

NOTE: to cook bacon with less mess and smell:

In oven put bacon on foil lined cookie sheet at 400 degrees for 25-30 minutes

OR

In microwave, using a glass dish, place bacon on four sheets of paper towel and cover with two sheets. For each slice of bacon cook one minute. Max six slices at a time.

Any left over cooked meat should work for these rings whether it be roast beef, turkey or pork. Just ensure that whatever “sauce” you use, you need about 1/2 cup of wet ingredients to 3 cups meat and cheese. Try it yourself and make an easy meal.
