This morning everyone is waiting in anticipation of the inauguration of Joe Biden as the 46th President of the United States. I thought I would post a snack recipe as it is always great to have a snack handy when glued to the T.V. , phone, tablet or computer.

This recipe I got from a box of Post Shreddies. I really like the taste of it and I know it gives me some fiber so I don’t feel quite so guilty sitting down and eating a bowl of it.

Ingredients

4 cups of Shreddies (I use honey Shreddies)

1 cup chopped pecans (better if toasted first 8 min @350°)

2 tsp cinnamon

1/2 cup brown sugar

1/4 cup butter

1/4 cup corn syrup

1/4 tsp baking soda

Directions:

Preheat oven to 250°

Mix cereal, pecans and cinnamon in a large mixing bow. Set aside.

Put brown sugar, butter and syrup in a pot on the stove. Bring to a boil over medium heat stirring. Once boiling, boil two minutes without stirring. Remove from heat and stir in baking soda.

Pour over cereal mixture and stir till combined.

Spread on parchment lined cookie sheet.

Bake at 250° for 30-35 minutes stirring every ten minutes.

Let cool, break apart and put in an air tight container.
