Part of my reasoning for adding recipes to my blog is so that I have a central place to find all of the recipes that I like and make often.

At our house growing up, my mom would regularly make chili . I am guessing that with eight mouths to feed, it was a healthy yet economical meal.

I found out after I left home that the “chili” my mom made was fairly mild compared to most people’s chili.

Early on in our marriage I asked for my mom’s recipe as I prefer my chili to not be spicy.

It was a meal that everyone would eat without complaint.

Over the years I have added a few things but it is pretty much the same recipe from when I was growing up.


Ingredients

1 lb of ground beef

1 onion chopped

3 garlic cloves minced

2 cups of chopped fresh mushrooms or 1 can of stems and pieces

1/4 cup of ketchup or 1 can tomato paste

2 tsp chili powder

1 tsp crushed red pepper flakes

2 Tbsp maple syrup (optional)

1 can brown beans (we like maple)

1 can Heinz chili style beans (you could use just kidney beans)

1 can 796ml diced tomatoes

1 can corn

Directions

Sauté the onion, garlic and mushrooms until softened.

Add the ground beef and cook until no longer pink. Drain grease.

Add the diced tomatoes, ketchup, chili powder and red pepper flakes.

Bring to a boil and let simmer.

Add the beans, corn and maple syrup.

Cook till heated through.

Serve with Tostitos Multigrain Scoops.

This is an easy meal and, if you have left overs, it freezes well. I hope you enjoy this not so spicy chili.
