On Sunday of last weekend we went to Chris’s brother’s place for supper. I always bring some sort of baking when we go to their place. I feel like Thanksgiving and pumpkin are always a great combination so I decided to look for a pumpkin spice cookie recipe. As usual, I altered one that I found; I have made enough cookies in my time to know what works and what doesn’t. These cookies were very tasty. Kind of the texture of a muffin but in a two-bite sized cookie.

Pumpkin Spice Cookies

Ingredients
2 1/2 cups flour

1 tsp baking soda

1 1/2 tsp pumpkin spice (1 tsp cinn, 1/2 tsp nutmeg would also work)

1/2 tsp salt

1/2 cup butter softened

1 1/4 cups sugar

1/2 cup pumpkin purée (well drained)

1 egg

1 tsp vanilla

Cinn/sugar (for rolling) 1/4 cup sugar, 1 tsp cinn

Directions

Mix dry ingredients and set aside. Beat butter and sugar then add pumpkin, egg and vanilla till smooth. Mix wet and dry ingredients till combined. Cover and chill in fridge for 1 hour.

Preheat oven to 350°. Line baking sheet with parchment paper. Using 1 Tbsp of dough, roll out balls and coat in cinn/sugar. Place 2” apart on pans (they don’t spread out much). Bake for 12 min or until lightly browned.

Wait ten minutes before removing to cooling racks.

**Note: I had frozen pumpkin purée in 1 cup amounts, loosely measured in a measuring cup. When I thawed and drained it, it seemed to be between 2/3-3/4 cup so I just used it all. If you used pumpkin from a can, stick with 1/2 cup.

I also recently made a pumpkin soup. A slight variation on the one that I posted a couple years ago.

I was quite excited because I had pumpkin, carrots and onion all from our garden to go into the soup. I replaced the sweet potato with more carrot and the soup was so much sweeter. I also added more cumin and garlic. I never add any milk to ours anymore and it still tastes great. Don’t forget to remove the bay leaf before blending.

The last pumpkin related thing I finally got accomplished was to make a fall napkin holder.
I have a bunny one for spring, a butterfly one for summer and a gnome one for winter but I needed something for fall.

I drew a rough pumpkin by hand, cut it out then traced it onto a piece of 1X6 board.

After cutting out the pieces with the bandsaw, I nailed a strip between the two to create a base. I then got to work painting and burning. I wanted one side for “fall” and one side for Halloween.

The paint layers got a bit dark and I don’t love it but it will do for now.

The Halloween side had to be a Jack o lantern of course.

Our fall season was extended this year with warmer temperatures until just recently. With the arrival of 5-10cm of snow today, I am pretty sure pumpkins will no longer be on my mind. I imagine my crafting and baking thoughts will now drift towards Christmas projects.
