This winter I have been making soup once a week for our supper. I went grocery shopping yesterday and bought a club pack of ground beef. We also had left over italian sausages from last night. Perfect time to make this soup.
Do you ever add a ice cube to soup because it is just too hot to eat?? This time I added one of my lettuce ice cubes and I could not even taste it. It is almost smoothie season and I think I will start to add one cube to those as well.
Ingredients
1 onion diced
2 celery stalks diced
2 garlic cloves minced
2 italian sausages diced
1/2 lb ground beef
1 15oz can of diced tomatoes with italian spices
1/4 cup ketchup
4 cups chicken broth (I used ham broth)
1 Tbsp italian seasoning
1/2 tsp crushed red pepper
1/2 tsp black pepper
1/2 tsp salt
1/3 package of egg noodles
Directions
Saute the veggies in a large pot until they start to soften. Add the ground beef and sausage. Cook until browned. Drain the grease.
Add in the tomatoes, ketchup, broth and spices.
Bring to a boil then cover and simmer.
Add the noodles and cook until the noodles have softened. Turn off heat.
This is a hearty and tasty soup; perfect for a supper meal.
