Every year I try to find something to bake that is different and can be mailed. I usually mail some treats along with gifts to both my parents and my in-laws and I try to get it in the mail the first week of December.
I already mailed my parent’s parcel because I had something to get to them for the start of advent. I still have my in-laws parcel to send out so, if this recipe works, they will be getting some.
This year I decided to try this recipe that uses peanut butter ritz bits sandwiches. I had bookmarked the recipe months ago but saw them on sale recently while shopping and decided I should try the recipe.
I feel a mix of anxiety and guilt lately when any recipe calls for brown or white sugar. A world sugar shortage and a strike at Vancouver’s Roger’s sugar plant is making sugar somewhat scarce on our local grocery store shelves. It has become like toilet paper was during COVID.
Ingredients
2 boxes of Ritz Bits Peanut Butter sandwiches
1/2 cup salted butter
1/2 cup brown sugar
3/4 tsp vanilla
1/2 tsp cinnamon
Topping:
3 Tbsp of white sugar
3/4 tsp cinnamon
Directions
Preheat oven to 350°.
Line a baking sheet with 2 layers of foil. Depending on the size of your baking sheet, two boxes will just cover the sheet in one full layer. If you have a smaller sheet than mine, you may have a few left over.
In a saucepan combine the 1/2 cup of butter with 1/2 cup brown sugar. Add the 3/4 tsp of vanilla and 1/2 tsp of cinnamon. Bring the mixture to a low boil over med high heat. Boil for 1 1/2 min stirring frequently.
Slowly pour over the crackers in the pan. Using tongs or a spatula turn the crackers so both sides are coated.
Bake at 350° for 10 min.
Remove from the oven.
Combine the topping of white sugar and cinnamon. Sprinkle with a spoon all over.
Let the mixture cool and break apart. Enjoy!!
These are one of those sweet snacks that you just want to keep eating. It is so tasty. I will definitely be adding it to my Christmas baking recipes for future years.
I made these almost a week ago now and they still seem to maintain their firmness. I was concerned that the crackers would soften over time because it was only baked for 10 minutes. I would have liked it to have a bit more crunch so I think I will extend the baking time next time and keep a close eye so that the crackers don’t burn. Another option would be to let the butter/sugar mixture cook longer like with caramel corn(not stirring after boiling)then stir in the cinnamon and vanilla at the end. I might just have to experiment.
As far as putting them in the mail, if they still seem ok next week when I plan to mail the parcel to my in-laws, they will get some Ritz Bits Churros for Christmas.
