This is one of my favourite meals for using up leftover chicken.
Ingredients
6 tortillas 10”
3-4 cooked chicken breasts diced
6 slices of bacon cut into pieces
1 sweet pepper diced
green onion
2 cups shredded cheese
ranch dressing
Directions
Spray a large frying pan generously with cooking spray.
Place two tortillas in the pan folded.

Fill each tortilla with ingredients, starting and ending with shredded cheese.
This helps to keep it together when flipping.


Spray top of tortillas with cooking spray and sprinkle vegetable seasoning on the outside.
Cook on med-high heat until cheese starts to melt a bit.
Using a flipper and a spatula, carefully and quickly flip them over. This takes some practice to not make too much mess.
Let the second side cook for 3-4 minutes.
Remove from pan, cut in half and enjoy.
You can place on a cooking sheet in the oven at lowest heat until all six tortillas are done.
Feeds 4 adults (1.5 quesidillas each)
