I had planned to make this pie over the Christmas holidays but could not find the recipe. I knew it was from a Gooseberry Patch book but I had already packed my recipe books and couldn’t even find the box amongst everything already packed. I looked online but I knew that it wasn’t just a regular pecan pie; there was something extra in it.
This last week I moved photos from my IPad to my desktop computer. I went through each photo, giving it a name and then organized the photos into folders. It is so much easier when trying to find a specific photo later on. Low and behold I found a picture I had taken of this recipe.
Caramels…the secret ingredient was caramels.
My husband is not a baker so if I want a cake on my birthday it will either be bought or I get to make my own. Instead of making a cake or a special dessert, I decided to make this pie.
Ingredients
1 deep dish pie crust (a regular crust doesn’t hold the whole recipe)
36 caramels unwrapped
1/4 cup milk
1/4 cup butter
3 eggs
3/4 cup sugar
1/2 tsp vanilla
1/4 tsp salt
1 cup of pecan halves
Directions
Preheat oven to 350°.
In saucepan heat caramels, milk and butter on low until smooth. Remove from heat.
In a mixing bowl, beat together eggs, sugar, vanilla and salt. Stir in the caramel mixture. Fold in the pecans.
Pour into the deep dish pie crust.
Bake at 350° for 45-50 min.
The pie will seem loose and will puff up when it comes out of the oven but it firms up as it settles back down.
Let the pie cool and serve with your favourite whipped topping.
