At the time of writing this post, I have picked just over 24 large ziplocks (14-16 cups in each) of Saskatoons off the bushes on our property. I have given some away, juiced some and recently I made Saskatoon butter tarts.
I have been searching for different types of recipes that include Saskatoons. I came across this one on Pinterest.

I found the berry part great but I decided to go with a halved version of the butter tarts I like to make at Christmas. I also had some frozen tart shells so I didn’t need the recipe for tart shells.
Here is my version:
Berry Good Butter Tarts
Ingredients
12 frozen tart shells
Saskatoon pie filling
2 cups frozen or fresh Saskatoons (I used frozen)
2 Tbsp water
1 Tbsp lemon juice
6 Tbsp sugar
1.5 Tbsp cornstarch
Heat 2 cups of berries and 2 Tbsp water on med low for 10 min. In separate bowl mix together the 6 Tbsp of sugar and 1.5 Tbsp of cornstarch. Add sugar/cornstarch mixture to berries in saucepan. Mix well then add 1 Tbsp of lemon juice. Continue stirring until thickened. Remove from heat and let cool.
Butter tart mixture (separate bowl)
1/2 cup brown sugar
1/4 cup corn syrup
1/8 cup (2 Tbsp) salted butter melted
1 egg
1/2 tsp vinegar
1/2 tsp vanilla
Whisk all ingredients until combined.
Directions
If you remove the tart shells when you start mixing the berry mixture, it is a good amount of time to thaw them enough.
Preheat oven to 375°.
Add a heaping Tbsp of butter tart mixture to each tart shell.
Spoon a Tbsp of the berry mixture on top of the butter tart mixture in each tart shell.
Bake at 375° for 18-20 minutes or until crust is browned and butter tart mixture appears to have set.
I find straight butter tarts sometimes too sweet so this was a nice change. I like the way the berries thickened in the pie filling so I think I can also use recipe to make plain Saskatoon tarts or even a pie.
If anyone has any good recipes using Saskatoons they can send my way, please do. So far, I plan to make a salad vinegrette, liqueur, BBQ sauce and a pie filling that uses jello.
