I thought this would be a good time of the year to post this recipe. Some people are actively trying to lose weight, still on track with their New Year’s Resolution. Others may have made Lenten commitments which has them reducing the amount of baked goodies they can eat. This recipe helps because it only makes one large cookie. Perhaps you may be off sugar but your spouse still eats whatever they want. You don’t have to make an entire batch of cookies that will tempt you but still be able to make either yourself or your spouse a single dessert or treat.

For me, I am still slowly eating my leftover Christmas baking from the freezer and this gives me something different to have as a quick treat. My husband is not a fan of peanut butter cookies.

Ingredients

1.5 Tbsp peanut butter

1.5 Tbsp sugar

2.5 Tbsp flour

1 Tbsp milk (I use almond milk)

A few choc chips (optional). I added a few butterscotch chips.

Directions

Combine the ingredients in a soup bowl.

Roll the dough into a ball and place on a microwave-safe small dessert plate.

Cook on high uncovered for 60-90 seconds.
Every microwave is a bit different so start with a minute.
It should look drier on the edges and the middle will still be bubbling a bit.

Let cool at least five minutes so it can firm up enough to lift with a spatula. If you let it fully cool, it will be a very crunchy cookie so I suggest eating it while it is still warm.

It may not be the prettiest cookie out there but it tasty really yummy. The texture reminds me of a monster cookie. An easy way to make a cookie without dragging out the mixer and cookie sheets then waiting for them to bake.
