During our heat wave earlier in the week, I was craving a popsicle. We hadn’t bought any yet this summer and it is a 25 minute drive to the nearest grocery store. Instead, I starting thinking about what I had on hand that could be used to make some myself.
I had a few different boxes of jello in the cupboard and did a search online to see if jello could be used to make popsicles. There was a variety of ingredients to add, a variety of quantities of ingredients and mixed reviews. I recalled that I have a Jello brand cookbook in the cupboard so I thought maybe there would be a recipe in there for popsicles. I hit the jackpot.
I had bought the box of lemon jello for a recipe that I never ended up making. I decided to go with the lemonade pops. I used four popsicle molds and four Dixie cups. I think even a plastic cup would work.
I saw the suggestion after I had used tape that a piece of plastic wrap with a slit cut in it would work great to keep the stick upright. We had these small sticks from some ice cream treats but popsicle sticks would work just as well.
These lemonade pops tasted like lemon meringue pie. Somehow the gelatin makes it easy to bite and yet it doesn’t drip. So much better than eating a regular popsicle.
I plan to try a few different jello flavours this summer and mix some of the fresh berries that I will be picking. You could always buy sugar-free jello to cut down on the sugar.
The second summer treat I decided to try was to use pudding mix and make something akin to a fudgesicle. I was going to use chocolate almond milk but it has been recalled everywhere this week so I bought some regular chocolate milk.
Chocolatey Fudgesicles
1 box chocolate pudding mix
2 cups chocolate milk
1 cup Cool Whip
Mix the pudding with the milk and fold in the Cool Whip. Spoon into popsicle molds.
Apparently, if you prefer vanilla flavour, you can just mix vanilla pudding and white milk with the cool whip. It was thick enough that the stick stayed upright on its own without needing to cover it. I will just make sure to eat those two soon.
The third treat I decided to make was using in season berries and almost expired yogurt. Strawberries are a good price right now so I decided to buy some this week. I had some Greek vanilla yogurt nearing its due date so I decided to also make these strawberries and cream pops.
Strawberries and Cream Pops
1 1/2 cups of Greek vanilla yogurt
1 cup diced strawberries
2 Tbsp of honey
I used my magic bullet and did half the recipe twice to get enough to fill 7 Dixie cups. I tried the plastic wrap on top and used an elastic to secure it around each cup.
Now I have three different refreshing summer treats for our next heat wave arriving in a couple days. These recipes make small enough amounts that there shouldn’t be any uneaten popsicles left over by the end of summer and they should be eaten quickly enough to avoid freezer burn.
Brings back memories.
