As I mentioned in my post about my Christmas Baking Plan, there are recipes that I make every year. This year, I decided to ask my adult children which of my usual baking has become their favourites.
Jonathan, my eldest, chose the soft ginger cookies. I do tend to make a batch at Christmas but these are also my “go to” ginger cookies all year round. Everyone enjoys them and they never last long.
Matthew, our middle child, picked the “bar with the Skor in it” or my Toffee Cookie Brownies. It can be a little tricky to get the baking time perfect but the end result is SO GOOD!! It takes 6 Skor bars so I suggest you stock up at Dollarama, you can’t beat their $0.82 chocolate bar price.
Matthew also mentioned the same recipe as his second choice that Thomas, our youngest, claimed as his favourite. The Mackintosh Toffee Drops; recipe in my Christmas Baking Plan post.
Here is where I run into trouble. A Kellogg’s strike in the States and the flood situation in BC have left store shelves bare where the Corn Flakes and Rice Krispies usually are. I bought a store brand of Corn Flakes but they really don’t taste the same. There also appears to be a shortage of Mackintosh Toffee due to COVID and so far I have not been able to find any this year. This happened as well a few Christmas’s ago and I didn’t make the recipe. I WAS able to find a similar recipe using Werther’s caramels instead. Here is the link for this and other Werther’s recipes; check it out.
Soft Eclair Clusters
Ingredients
3 Tbsp milk (I used almond milk)
1/3 cup butter
36 pieces of Werther’s soft eclair caramels (2 bags)
4 cups corn flakes (the recipe called for 3 1/2)
Directions
Heat the milk and butter on low until the butter is melted.
Add caramels to the pot and stir until they are all melted and combined with the milk/butter.
Remove from the heat and fold in the corn flakes.
Drop by spoonful onto parchment lined cookie sheets.
Using buttered fingers, press mounds together.
Let them cool then place in the refrigerator to firm up.

The recipe turned out pretty good. There is more of a chocolate/caramel taste than when I use the toffee and I would always recommend Kellogg’s Corn Flakes over a store brand but otherwise it was worth making. I am going to try using Werther’s Chewy Caramels in my next batch to see if the taste is more like the toffee.
Little do my children know but all of their favourites are my favourites.
That is why I keep making them year after year.
It is never good for my waistline but I always make an attempt in the New Year to wear off some of the pounds that I gain from eating my own Christmas baking.
