A few of the places that we have lived have had some great places for all-you-eat Chinese food. My favourite dish has always been the chow mein type dish that has the thin noodles. At some point, I searched for something similar at the grocery stores and found these noodles.

They are super easy to cook and taste just like the ones you would find at a Chinese food restaurant. Unlike regular pasta, they take only a couple minutes to cook.

Chow Mein

Ingredients

olive oil

1 onion diced

3 garlic cloves minced

1 large carrot diced

1 celery stalk diced

1/2 sweet pepper diced

2 cups mushrooms diced

3 cups leftover cooked chicken, pork or even steak cut in bite sized pieces

1/2 bag of Farkay noodles

Thai Kitchen Red Thai Chili sauce from Costco (VH version is spicier and ok)

Directions

Sauté the veggies in olive oil in a frying pan until softened.

Cook the garlic and onion first.

Add the carrot, celery and peppers.

Wait a few minutes then add the mushrooms.

If in a rush like I was this time when I made it, add them all at once.

Carrots, celery and peppers will just be a bit crunchier.

Add meat and cook just till heated through.

Boil water and cook noodles. Drain.

To Serve: Place noodles in a bowl and cover with veggies

Gently stir together.

Add some red thai chili sauce.

Enjoy

You can use any vegetables that you enjoy. Sometimes I add diced cabbage. You can even buy the bag of coleslaw or broccoli slaw and use that. Add some Bok choy. Sugar snap peas and wax beans are great additions in garden season.

I used to eat this meal without the sauce but I am a sugar fiend so now that I have discovered it, I always use it. I just love the combination of the soft noodles with the semi crunchy veggies. It is so easy and one of my favourite meals.
