I have planted lettuce in my garden no matter where we have lived. Often it has been too dry and the lettuce ends up bitter and not worth bothering to eat. This year we had a good year for lettuce with rain often, just at the end of the day. I had more lettuce than I knew what to do with so I decided to harvest and freeze it.

First I picked the lettuce filling my largest mixing bowl. I brought it in the house and dumped it in my sink.

After washing the lettuce I broke it into small pieces and put it into a magic bullet cup.

I realized after a few batches that adding a splash of water to the cup helped to get the lettuce mixing. You want to fill the cup but not jam it in there.

Then you mix it until it is pretty much liquefied and it looks like this. As you can see, those bits of lettuce do not make very much liquefied lettuce.

I poured out the liquid into a 2 cup measuring cup just to see how much I would end up with. All the lettuce I picked made just over 2 cups of liquid.

I have ice cube trays that I have for freezing DIY pesto (another post in the future). I filled two trays and only had a tiny bit left over.

I left the trays in the freezer for about 24 hrs. Once set, I popped the cubes out of the trays and put them in a large plastic ziplock in the freezer.

I repeated this whole process another day but the 48 cubes were too much for the ziplock so I put all the cubes into a plastic container. Not sure how they will do in there as there is potential for freezer burn with space but I will see and be sure to update.

I have already used cubes in chili and could not taste the lettuce. I plan to add cubes to my homemade soups and stews this fall/winter just to add some extra greens into our diet. I really do not like to eat salad in the cold weather months.
